Burger buns



Last night I spent 3 1/2 hours making burger buns, burgers, sweet potato fries and mayonnaise, and I thought it was a very satisfying thing to do on a Friday night while my husband was at a work party.

5:00pm - started the buns
6:30pm - shaped the buns and let them rise for 40 minutes
6:40pm - started the veggie burgers
7:10pm - put the buns in the oven
7:15pm - peeled and chopped the sweet potatoes
7:30pm - took the buns out of the oven and put in the sweet potatoes
7:40pm - finished breading the burgers and put them in the oven; took out the sweet potatoes
8:00pm - made the mayonnaise and organized the sliced onions, lettuce, cheddar, tabasco, mustard
8:30pm - one of the best dinners!
*Could have added chocolate milk shake, to finish off a proper American meal!

The reason I make my own burger buns is because I've only seen burger buns with a lot of preservatives and sugar at the grocery store. And they're so easy to make and turn out so pillowy soft! You can make them healthier by using half whole grain flour, which makes them slightly less soft, but it's up to you!





Burger buns
Makes 6

3 1/4 cups all purpose flour (OR 1 3/4 cups all purpose flour + 1 1/2 cup spelt or whole wheat flour)
1 1/2 tsp active dry yeast
1/2 tbs honey or sugar
1/2 tsp salt
1 tbs canola oil
1 cup warm milk (2% or mellan is fine)
1/3 cup warm water
1 tbs butter for greasing the tops, afterwards

1. In a large bowl, proof the yeast with the warm milk, water and honey.

2. Add the flour, salt and oil. Knead 5 - 7 minutes, until smooth and springy.

3. Cover with a tea towel and keep in a warm place for 1 1/2 - 2 hours.

Alternately, cover and refrigerate overnight. In the morning, bring to room temperature, about an hour, before shaping.

4. Shape the dough: Divide into 6 and shape each into a ball, flatten, and arrange on a parchment-lined baking sheet. Place each dough 1/2 inch apart. Cover with a tea towel and allow to proof for about 40 minutes.

5. Preheat the oven to 375F or 190C. When the oven is hot, bake the buns for about 15 - 20 minutes, until golden, or until a digital thermometer inserted in the center at least reads 90C.

6. As soon as they come out of the oven, grease the tops of the buns with butter (it makes them softer) and transfer buns to a wire rack to cool.

Enjoy with your favorite veggie burger and store the rest in an airtight container!
